Ad Herbs Creamy Lemon & Dill Salmon Pasta
Serves 2 - 3
Ingredients
2 skinless salmon fillets
180g pasta (linguine or tagliatelle work beautifully)
100ml double cream
1 lemon, juice and zest
1 garlic clove, finely chopped
1 tbsp olive oil
50g baby spinach
A generous handful of fresh AdHerbs dill, chopped
Salt and freshly ground black pepper
Parmesan to serve (optional)
Method
Pasta first. Cook the pasta in salted boiling water according to the packet instructions. Save a mug of pasta water before draining.
Sizzle the salmon. Heat the olive oil in a frying pan over medium heat. Season the salmon and cook for 4–5 minutes on each side, depending on thickness, until cooked through. Remove from the pan and gently flake into chunks.
Get saucy. In the same pan, gently cook the garlic for 30 seconds. Add the cream, lemon zest and a squeeze of lemon juice. Stir and simmer gently for 2 minutes.
Add some green. Stir in the spinach and let it wilt. Add a splash of reserved pasta water to loosen the sauce.
Bring it together. Toss the cooked pasta through the creamy sauce, then gently fold in the salmon.
Dill-icious! Take the pan off the heat and stir through plenty of fresh AdHerbs dill. Finish with black pepper, extra lemon juice to taste and a little Parmesan if you like.
Herby tip: Dill loves lemon! Add it right at the end of cooking to keep its delicate flavour beautifully fresh.
