Zesty Lime & Coriander Chicken Bowls

Serves 2 - 3

Ingredients

  • 2 chicken breasts, sliced

  • 150g basmati rice

  • 1 red pepper, sliced

  • 1 avocado, sliced

  • 1 small carrot, grated

  • 2 tbsp soy sauce

  • 1 tbsp honey

  • 1 lime, juice and zest

  • 1 garlic clove, crushed

  • 2 tbsp olive oil

  • A generous handful of fresh AdHerbs coriander, chopped

  • Salt and pepper

Method

  1. Get the rice going. Cook the rice according to the packet instructions, then fluff with a fork.

  2. Make it zing. Mix the soy sauce, honey, garlic and half the lime juice in a bowl.

  3. Sizzle away. Heat the oil in a frying pan, add the chicken and cook for 6–8 minutes until golden and cooked through. Add the pepper and cook for another 3–4 minutes.

  4. Bring on the flavour. Pour over the sauce and let everything bubble for a minute or two until glossy.

  5. Build your bowl. Divide the rice between two bowls and top with the chicken, pepper, avocado and carrot.

  6. The finishing touch. Scatter generously with AdHerbs coriander, add the remaining lime juice and zest, and tuck in!

Herby tip: Don't be shy with the coriander! Stir some through the warm rice as well as scattering it on top for an extra burst of freshness.
