Handy Herbs Coriander and Sweetcorn Fritters Recipe

Serves 2 - 3

Ingredients

  • 150 g sweetcorn kernels (tinned, fresh, or frozen and defrosted)

  • 1 egg

  • 40 g plain flour

  • ½ teaspoon baking powder

  • 1 spring onion, finely sliced

  • 1 tablespoon Handy Herbs fresh coriander, finely chopped

  • ¼ teaspoon ground cumin (optional)

  • Salt and pepper, to taste

  • Oil for shallow frying

Method

  1. Mix the batter
    In a bowl, whisk the egg. Add the flour, baking powder, cumin, salt and pepper. Mix until smooth.

  2. Add the vegetables
    Stir in the sweetcorn, Handy Herbs coriander, and spring onion.

  3. Heat the oil
    Add a thin layer of oil to a frying pan and heat over medium.

  4. Cook the fritters
    Drop heaped tablespoons of the mixture into the pan. Fry 2–3 minutes per side, until golden and crisp.

  5. Drain & serve
    Drain on kitchen paper. Serve warm with lime wedges, yoghurt, or sweet chilli sauce.
