Handy Herbs Coriander and Sweetcorn Fritters Recipe
Serves 2 - 3
Ingredients
150 g sweetcorn kernels (tinned, fresh, or frozen and defrosted)
1 egg
40 g plain flour
½ teaspoon baking powder
1 spring onion, finely sliced
1 tablespoon Handy Herbs fresh coriander, finely chopped
¼ teaspoon ground cumin (optional)
Salt and pepper, to taste
Oil for shallow frying
Method
Mix the batter
In a bowl, whisk the egg. Add the flour, baking powder, cumin, salt and pepper. Mix until smooth.Add the vegetables
Stir in the sweetcorn, Handy Herbs coriander, and spring onion.Heat the oil
Add a thin layer of oil to a frying pan and heat over medium.Cook the fritters
Drop heaped tablespoons of the mixture into the pan. Fry 2–3 minutes per side, until golden and crisp.Drain & serve
Drain on kitchen paper. Serve warm with lime wedges, yoghurt, or sweet chilli sauce.
