Handy Herbs Cucumber and Mint Salad
Serves 2 - 3
Ingredients
1 medium cucumber
3–5 Handy Herbs fresh mint leaves, finely sliced
1 teaspoon lemon juice
1 tablespoon olive oil
½ teaspoon sugar (optional, balances sharpness)
Salt and black pepper, to taste
Optional extras:
A spoonful of yoghurt for a creamy version
Thinly sliced red onion
A pinch of chilli flakes
Method
Prepare the cucumber
Slice the cucumber thinly (rounds or half-moons). For extra crispness, lightly salt the slices and leave for 10 minutes, then pat dry — optional but effective.Make the dressing
In a small bowl, mix the lemon juice or vinegar with the olive oil, sugar, salt, and pepper.Assemble the salad
Toss the cucumber with the Handy Herbs mint. Pour over the dressing and mix gently.Serve
Best eaten immediately after dressing so it stays crisp and aromatic.
