Handy Herbs Curly Parsley and Lemon Cous Cous Salad Recipe
Serves 2 - 3
Ingredients
120 g couscous
150 ml hot vegetable stock (or water + pinch of salt)
2–3 tablespoons Handy Herbs Curly Parsley, finely chopped
1 spring onion, finely sliced
Zest of ½ lemon
1 tablespoon lemon juice
1–2 tablespoons olive oil
Salt and pepper, to taste
Optional extras:
A few cherry tomatoes, halved
Cucumber diced small
Toasted pine nuts or almonds
Crumbled feta
Method
Cook the couscous
Put the couscous in a bowl, pour over the hot stock, cover with a plate, and leave for 5 minutes. Fluff with a fork.Add the flavourings
Mix in the Handy Herbs chopped parsley, spring onion, lemon zest, and lemon juice.Dress it
Stir in the olive oil and season with salt and pepper.Finish & serve
Add any optional extras you like. Serve warm or at room temperature.
