Handy Herbs Curly Parsley and Lemon Cous Cous Salad Recipe

Serves 2 - 3

Ingredients

  • 120 g couscous

  • 150 ml hot vegetable stock (or water + pinch of salt)

  • 2–3 tablespoons Handy Herbs Curly Parsley, finely chopped

  • 1 spring onion, finely sliced

  • Zest of ½ lemon

  • 1 tablespoon lemon juice

  • 1–2 tablespoons olive oil

  • Salt and pepper, to taste

  • Optional extras:

    • A few cherry tomatoes, halved

    • Cucumber diced small

    • Toasted pine nuts or almonds

    • Crumbled feta

Method

  1. Cook the couscous
    Put the couscous in a bowl, pour over the hot stock, cover with a plate, and leave for 5 minutes. Fluff with a fork.

  2. Add the flavourings
    Mix in the Handy Herbs chopped parsley, spring onion, lemon zest, and lemon juice.

  3. Dress it
    Stir in the olive oil and season with salt and pepper.

  4. Finish & serve
    Add any optional extras you like. Serve warm or at room temperature.
